Serves 4
2 cucumbers, thinly sliced
2 cups arugula, sliced
1/2 cup fresh mint, slivered
1/2 red onion, thinly sliced
2 ounces feta cheese, crumbled
Vinaigrette
2 tablespoons freshly squeezed lemon juice
1 small clove garlic, mashed with
1/2 teaspoon salt
3 tablespoons extra virgin olive oil
More salt and freshly ground pepper to taste
1. Toss the veggies together in a bowl. Whisk the garlic into the lemon juice in a small bowl. Whisk in the olive oil. Adjust the seasoning. Toss the veggies with dressing. Top each serving with crumbled feta.
